STEEL CUT OATMEAL W. SPICED BLACK PLUM COMPOTE

I've had a love jones for steel cut oatmeal ever since I discovered it while in culinary school and ever since then I've enjoyed it so many ways, all the time, each and every time. It does take some time to cook (about 30 minutes if we are being honest) however I saw that Quaker Oats has a quick 3 minute steel cut oat in stores and of course I immediately grabbed it. I love my steel cut oatmeal with a compote or some type of soft simmered syrupy fruit so every spoonful is perfect.

 Here, I came across some black plums while cruising the produce aisle recently and decided to pair them with my oatmeal.

RECIPE NOTES:

-feel free to use your favorite brand of steel cut oatmeal, oatmeal or hot cereal

-this compote is seasonal so use the best fruit available to you; this would be perfect with fuyu persimmon's, pears, apples or figs this winter and peaches or nectarines in the summer.

-i like to cut the fruit in different size pieces for texture and then smash them a little bit while simmering.

 

 

Steel Cut Oatmeal w. Spiced Black Plum Compote

your favorite steel cut oatmeal, cooked to your preference

a few splashes of coconut milk, optional

a sliver of butter, optional

4 black plums, cleaned and cut in both pieces and slices

3T. sugar

5T. water

ground ginger

ground cloves

ground allspice

group black pepper

pinch of salt

squeeze of lime

 

Cook your steel cut oatmeal as to your desired preference and keep hot. I cooked my oatmeal  according to the instructions on the container and added a little coconut milk that I had on hand and a sliver of butter. 

In a small pot, add plums, sugar and water and simmer on low heat. Once the sugar dissolves and plums start to soften, add all of the spices to your desired taste, along with the lime juice and simmer. Once plums are a syrupy consistency spoon over a hot bowl of steel cut oatmeal & eat fabulously.
