Im Holding on to Summer. 

Summer is almost over (thats so hard to say out loud ) and like everyone else, Im savoring every bit of it. The gas in my apartment has been off for a few months and because of that, I had to come up with lots on non-cook dinners. Tomatoes are in season right now and what better way to send summer off with a fabulously juicy tomato watermelon salad. I know you have seen tons of variations of this salad on menus during the summer months but this one will be ready in less than an hour. This is perfect for a bbq to be placed right in the center of the table or for a cozy dinner on a rooftop with bae. 

Tomato Watermelon Salad with Feta 

3 tomatoes, cut into large pieces, seeds saved in a separate bowl 
1/2 a watermelon, cut into cubes 
1/2 a block of feta, pat dry and sliced
1/2 red onion, thinly sliced 
tomato seed vinaigrette, recipe below
salt and pepper 

Rinse tomatoes of any excess dirt and pat dry. Slice tomatoes into medium-large chunks, reserving seeds and excess juice in a separate bowl. In a large bowl, toss tomatoes, cubed watermelon, and red onions along with tomato seed vinaigrette. Adjust salt and pepper according to your liking. Top with sliced feta and serve. 

Tomato Seed Vinaigrette
the seeds and juice of 3 tomatoes
minced red onion 
white wine vinegar
pinch of sugar
blended oil
salt and pepper

In a small bowl, whisk together minced red onion, tomato seeds and excess tomato juice, vinegar, and sugar. While whisking, slowly add in blended oil. Season with salt and pepper and set aside.
