Yea... so its freezing here in NYC... and soup is officially needed. As I looked for something to make for dinner, the cans of tomatoes I always try to keep on hand in my kitchen, simply looked at me and said "tomato soup" and I said OK. Then I thought "grilled cheese" and my mind said "YES". Dinner was done from this point on as I grabbed my soup pot. This is a really quick super easy recipe, and also makes a lot of soup, so you will have some for a few days. Its also not for the dieting type because of the butter and cream, but of course, that is always optional. I had fontina grilled cheese to accompany this soup, and listen... all that cheesy deliciousness. Perfect combo.
Smokey Tomato Soup & Fontina Grilled Cheese
4 cans of whole peeled tomatoes
3-4 cups of water or stock
1 head of garlic, peeled
2 medium onions, large diced
2T. smoked paprika
1 stick of butter, optional
2c. of cream or half n half, optional
2 slices of your favorite bread, ( I like thick sliced potato bread )
fontina cheese, shredded
Place a large soup pot over medium heat. Add a few drops of oil and sauté onions and garlic, about 5 minutes. Add all of the cans of tomatoes to the onions and garlic and also add water or stock. Bring to a simmer. If the tomatoes become too thick, add more water or stock and continue to simmer soup for 20 minutes, adding sugar, smokey paprika, and salt and pepper to taste. Ladle soup in a blender and puree until smooth in batches, being cautious that the heat from the soup doesn't make the blender top blow off. Return pureed soup back to a pot over medium heat. Add cream and butter if using, and keep over a low simmer until serving.
Grilled Cheese Directions:
Place 2 slices of bread on a flat surface. Sprinkle shredded cheese on bread and assemble. In a large skillet, melt a few tablespoons of butter and place sandwiches in skillet. Let brown on both sides, allowing cheese to melt completely. Cut grilled cheese sandwich in half and dip in a fabulous bowl of smokey tomato soup.
