With quick thinking, my next option: Blueberry Cucumber Lemonade. I always have a pack of blueberries in my fridge during warmer months as they make a great and healthy snack to pop in your mouth. And who doesn't love all the healthy benefits of cucumbers including its antioxidant and anti- inflammatory powers?! With all the healthy ingredients in this lemonade, that is all the more reason to make and drink a lot more of it.
Blueberry Cucumber Lemonade
1 pint of blueberries, rinsed
1/2 cucumber, peeled and sliced
sugar, sweetness to your taste
fresh cold water
Rinse blueberries in water and remove any stems or bruised berries. In a blender, puree blueberries together with a small amount of water and when pureed pour through a strainer. Strain blueberries and discard chunky pulp, keeping the juice.
Squeeze juice from lemons over a strainer and pour lemon juice into your desired pitcher.
Combine blueberry puree, lemon juice and desired amount of water and sugar to your liking. Once combined, add sliced cucumbers and let stand refrigerated for 2 hours.
In a glass, pour lemonade over ice and garnish with slices of lemons, cucumbers and a hand full of blueberries.
