A fun alternative to your everyday french fry, I came up with these smoked paprika fries back the restaurant one night just for something different with the burgers and steaks. A play on "steak frites" if you will. They were so good, my staff use to call them "crack fries". We couldn't keep them in the bowl that night, and now when I make them at home the same thing occurs.
SMOKED PAPRIKA FRIES
1/2 of a bag of frozen shoe string french fries
3T. chopped parsley
3T. garlic, minced
6-8T. smoked paprika
5-6T. clarified butter (melted butter is just fine)
salt to taste
oil to fry
Deep fry fries in hot oil, until crispy and golden brown. In the bottom of a large bowl add parsley and minced garlic. Add piping hot fries on top of garlic and parsley. Add smoked paprika and toss, alternating between drizzling melted butter and salt to taste. Serve pipping hot with chopped parsley and garlic included.
