HERB AND GARLIC COMPOUND BUTTER
2 sticks, unsalted butter, softened
1/4 cup chopped parsley, washed and dried
garlic powder, to taste
salt and pepper, to taste
In a large mixing bowl combine all ingredients and whisk together until butter is smooth. On a flat surface spoon out compound butter onto wax or parchment paper, and roll into a log using the push and pull method with a cutting board or a cookie sheet. Twist ends tightly and place in fridge to harden. Slice when needed.
SOFT SCRAMBLED EGGS W/ HERB COMPOUND BUTTER
2 eggs, whisked + 1 teaspoon of water
1-2 slices of herb and garlic compound butter
In a small bowl whisk eggs and 1 teaspoon of water. In a large non-stick skillet over medium heat, melt 2 slices of compound butter. Add eggs, and scramble with a spatula, just until eggs begin to set. Serve hot with toast!
