Eating Fabulously, Christopher Stewart, Herbed Compound Butter Recipe

So over the holidays I really reached deep down into my chef self, and made a pretty cool dinner. A part of something that I made was herb compound butter. Compound butter, is a flavored and rolled butter if you will, that you typically see sliced and placed on top of steaks (or meats)..so that all its buttery deliciousness melts into the steak. I dont know a person that would love that all the time, but honestly you can use compound butters on a number of things and in a variety of ways! I made a basic herb and garlic compound butter for our broiled lobster tails, but a few days later I had the genius idea of cooking soft scrambled eggs in the butter as well.. Genius I tell you! Fabulous genius!

** I seasoned my butter heavily because I knew I would be using it as a main component on food.

** Butter can either be rolled and sliced or placed in a bowl and scooped out or frozen.

2 sticks, unsalted butter, softened
1/4 cup chopped parsley, washed and dried
garlic powder, to taste
salt and pepper, to taste

In a large mixing bowl combine all ingredients and whisk together until butter is smooth.  On a flat surface spoon out compound butter onto wax or parchment paper, and roll into a log using the push and pull method with a cutting board or a cookie sheet. Twist ends tightly and place in fridge to harden. Slice when needed.

In a small bowl whisk eggs and 1 teaspoon of water. In a large non-stick skillet over medium heat, melt 2 slices of compound butter. Add eggs, and scramble with a spatula, just until eggs begin to set. Serve hot with toast!
