Although I am a chef, there are just certain foods I'm not touching, especially if my mom is home. To me she is a great cook so every chance I get to eat her cooking (which is very rare) I'm on it!! My friends, family and I agree that my moms mac n cheese is something wonderful. Its comfort food at its finest. She only makes it once a year and she makes 2 large pans. After that we must wait till the following year...sigh... but hey it's well worth it. 

The following recipe can be crafted to how you and your family enjoy mac and cheese. 


1 box of elbow macaroni, cooked as instructed on the box and cooled completely

2-3 cans of cans of evaporated milk

2 eggs

2 heaping Tablespoons of mayo

1 block of Velvetta, cubed

2 blocks of Extra Sharp cheddar cheese

2 blocks of Extra Extra Sharp cheddar cheese

1 block of Havarti cheese

1 block of Gouda or Fontina cheese

1 ball of Smoked Mozzarella cheese

Combine and shred 1 block of extra sharp, 1 block of extra extra sharp and the remaining cheeses and set aside in a large bowl(bowl #1) . In a second large bowl, shred remaining block of extra sharp and sharp cheddar cheese and set aside(bowl #2). You should have 2 separate bowls of shredded cheese. Cook macaroni al dente, drain, and cool, making sure the macaroni is completely cold. Transfer to a large bowl and season with a little salt. Whisk in 2 eggs to the macaroni, stir and set aside. In a large saucepan over a medium to low flame, add evaporated milk. Allow the milk to become hot but do not let the milk boil. When the milk is hot, gradually whisk in bowl #2 of the cheeses until completely melted. Lightly grease a large deep oven safe baking dish. Place macaroni in baking dish, leaving 2-4inches of room at the top. Add 2T. of mayo to macaroni and stir. Pour melted cheese sauce over macaroni, stirring evenly. Do not pour cheese sauce to the top, this dish expands in the oven. Sprinkle bowl #1 of shredded cheeses completely over the macaroni evenly, and place in a 375 degree oven until cheese is melted and bubbling, about 20 minutes.
